Kluski śląskie are built on potato starch. The base is the same as kopytka — a kilo of boiled potato — but the wheat flour is replaced by starch, and that is what gives them their white colour, smooth surface and spring.

How it works

The quarter rule

Traditionally it is measured by volume: spread the riced potato on a plate, lift out a quarter, and put back the same amount of potato starch. AniaGotuje puts a number on it — 200 g of starch per kilo of potato, or 20%.

The egg is optional

AniaGotuje uses one per kilo and says outright that it can be left out. Kwestia Smaku uses one per half kilo: a tighter dough that holds its shape better and eats firmer. Hence the 5–10% band.

The dimple in the middle

The thumbprint evens out the cooking — the dumpling is thinner in the middle, so the centre is done when the edges are. On the plate it collects sauce.

FAQ

Potato starch or potato flour?

In Polish shops "mąka ziemniaczana" and "skrobia ziemniaczana" are the same product. Look for the fine, squeaky white powder, not dried potato flakes.

Can I make them without the egg?

Yes — AniaGotuje says so in the recipe. The dough is more delicate and wants gentler handling, but the starch holds it together on its own.

Why do they dissolve into mush?

The water was boiling too hard, or the potato was too wet. Keep the surface barely moving, give them 10–12 minutes, and stir gently only at the start.

How many dumplings does a kilo of potato make?
