Kluski leniwe are the dumplings you make when there is no time for pierogi: twaróg mashed with egg, just enough flour to hold it together, cut on the slant and boiled for a minute. The cheese is the base here, because that is what you start from.
How it works
The dough
AniaGotuje on 500 g of twaróg półtłusty, ground or pressed through a ricer: two eggs (22%), 100 g of flour (20%), two spoons of very soft butter and half a flat teaspoon of salt. Yolks and butter go into the cheese first, the flour after, and the beaten whites last. The mass is sticky and looks impossible to shape; do not add more flour.
Shaping
A floured board, a third of the mass at a time dusted on top, rolled with dry hands into a 3 cm log and cut on the slant with a knife. Kwestia Smaku flattens the log with a wide knife before cutting; Moje Wypieki keeps the flour to a minimum, "the less the better".
Cooking
Lightly salted water barely simmering, not at a rolling boil. The dumplings float within moments; take them out no later than a minute after they surface, and drain well. Fried breadcrumbs in butter and sugar are the classic top; AniaGotuje serves a vanilla cream sauce.

FAQ
Which cheese?
Block twaróg, half-fat or full-fat, ground or riced. AniaGotuje avoids the smooth tub cheese sold for cheesecake because it is too loose; Kwestia Smaku says a smooth cream-style twaróg needs no grinding at all.
How much flour?
As little as holds: 100 g on 500 g of cheese here. Kwestia Smaku uses about half a cup on 300 g plus a spoon of potato starch, Moje Wypieki half a cup on 200 g. A wetter cheese takes a little more.
Can I leave out the butter?
Yes. AniaGotuje says to skip it or use one spoon with a full-fat cheese; the classic version is only cheese, egg and flour.
How many does it make?
At least 50 small dumplings from 500 g of cheese, four modest servings of about 185 g of dough each.
