Blini batter calculator
Yeasted buckwheat blini: half buckwheat, half wheat, plenty of milk and an hour's rise before they meet the pan.
Total hydration counts the water inside the eggs, milk and butter.
Blini are a yeasted batter of buckwheat and wheat flour, thin enough to spoon and thick enough to hold bubbles. An hour’s rise does what baking powder does in a pancake, with more flavour and a softer crumb.
How it works
Two flours
AniaGotuje mixes 180 g of buckwheat flour with 160 g of cake flour, so the base is 53% buckwheat. Buckwheat has no gluten and gives the taste; the wheat holds the bubbles the yeast makes. Kwestia Smaku runs 250 g of buckwheat to 100 g of wheat, a darker and more crumbly blin. All-buckwheat is possible, and AniaGotuje has a gluten-free version, but it eats like a thick crêpe rather than a risen pancake.
Milk and yeast
450 ml of milk on 340 g of flour, 132%, gives a batter the source compares to warm custard. The milk should be lukewarm, no more than 30 °C, or the yeast dies in it. 15 g of fresh yeast (4.4%) is enough for a 60-minute rise in a warm spot; Kwestia Smaku uses 25 g for a 45-minute rise after a 15-minute starter.
On the pan
Medium heat, a film of oil or clarified butter, a large spoonful per blin. Turn when the underside browns, after about a minute and a half; the second side takes less. AniaGotuje fries 11 cm blini one at a time in a small pan and gets 13 from the batch.

FAQ
Instant yeast instead of fresh?
AniaGotuje gives the swap herself: 15 g of fresh yeast or a full teaspoon of dried. The yeast-type switch on the row converts the dose at the usual 3:1.
What if the batter does not rise?
AniaGotuje says it fails only when the milk was hot enough to kill the yeast or the yeast was dead. Cold ingredients only slow it down; give it up to two hours. Longer than that and it over-proofs and tastes strongly of yeast.
Whole egg or yolk?
AniaGotuje uses a whole large egg, Kwestia Smaku a yolk only. Neither separates and whips the whites; the yeast does the lifting.
Sweet or savoury?
The batter is barely sweet, a flat teaspoon of sugar on 340 g of flour, and AniaGotuje adds two more teaspoons for a sweet blin. For a savoury one the salt row matters, and Kwestia Smaku’s teaspoon is the figure here.
