Zucchini fritters are counted from the grated squash, the way the Polish sources weigh them. On 350 g of it go two eggs, four spoons of flour and a spoon of sour cream; the rest is what you fry them in.
How it works
To squeeze or not
AniaGotuje grates a young zucchini, lets it stand a few minutes and looks: wet but not swimming, leave it; a puddle, pour it off. Kwestia Smaku squeezes the grated zucchini lightly in her hands and binds it with a third of the flour. That is why the flour band is so wide, 10–20%: the wetter the mass, the more flour it takes to hold a shape.
Eggs and flour
Two small or medium eggs and 70 g of flour on 350 g of zucchini (29% and 20%) give a batter that spoons onto the pan and holds an 8 cm round. Kwestia Smaku uses one egg and 30 g of flour on 300 g, with two spoons of milk, for a looser and lacier fritter. A full spoon of 18% sour cream (4%) is AniaGotuje’s addition; it makes the inside softer.
Frying
A 24 cm pan takes three fritters at a time, and four spoons of oil cover the whole batch, so the layer is thin. Two to four minutes a side over medium heat, until the edges brown. Fourteen fritters from one zucchini.

Peel the zucchini?
No, unless the skin has gone hard. Cut off both ends and grate on the small or medium holes.
Garlic and herbs?
One medium clove and a handful of chives at AniaGotuje; a quarter of a small onion and a spoon of dill or parsley at Kwestia Smaku. Neither weighs them, so they are not rows.
Gluten-free?
AniaGotuje says yes: a ready gluten-free flour blend, added gradually until the batter holds.
How many fritters?
Fourteen thicker ones of about 8 cm from 350 g of zucchini, roughly 38 g of batter each. Kwestia Smaku gets ten smaller ones from 300 g.
