Piernik staropolski is a honey dough that is mixed weeks before Christmas and left in the cold to mature, then baked in thin sheets and layered with plum jam. Half honey by weight of the flour, a third sugar, a quarter butter, and baking soda for the rise: no yeast, no waiting on a proof, only on time.

How it works

The dough

Moje Wypieki, after Lemnis and Vitry: a kilo of flour, 500 g of honey, 330 g of sugar, 250 g of butter, three large eggs, three teaspoons of baking soda dissolved in 125 ml of milk, half a teaspoon of salt and 80 g of gingerbread spice. Honey, sugar and butter are warmed together until the sugar dissolves, cooled, and the flour sifted straight in, then the soda in the milk, eggs, salt and spice. Kneaded, it is quite loose; it firms as it sits.

Maturing

Into a stoneware, glass or enamel pot, covered, in the fridge or a cold pantry for five to six weeks at Moje Wypieki. AniaGotuje asks for at least two weeks and prefers four to six; Kwestia Smaku two to three, and for small pierniczki anything from a few days to four weeks. The dough darkens and the flavour rounds out. Bake five to seven days before Christmas.

Baking and layering

Three sheets of 39 by 26 cm, each rolled about half a centimetre thick, 15 to 20 minutes at 170 °C; the sheets nearly double in height. Cooled, they are spread with warmed plum jam, about a kilo of it, covered with paper, weighted and left three to four days to soften. Then chocolate glaze or icing and chopped walnuts. Kwestia Smaku bakes one large sheet at 180 °C for 25 to 30 minutes and cuts it in three.

FAQ

Which honey?

A natural one, and Moje Wypieki suggests acacia; AniaGotuje acacia or linden. AniaGotuje adds that natural honey keeps the cake far longer than the artificial kind. All three Polish recipes use half the flour’s weight of it.

How much spice?

80 g on a kilo at Moje Wypieki, less if the blend is home-made and strong; 50 g at AniaGotuje. Check that a bought blend contains no flour or sugar.

Can I bake it sooner?

Kwestia Smaku’s pierniczki from the same dough go into the oven after a few days as long as the dough is cold. For the layered cake the sources agree on at least two weeks. It matures in the cold; a warm kitchen does not shorten the wait.

How long does it keep?

Weeks, wrapped in baking paper or a linen cloth. Kwestia Smaku says it gets better with every day, and AniaGotuje keeps a third of her dough maturing until New Year.
